I don’t make a habit of shopping for freezer food (aside from gluten-free pizza, my guiltiest pleasure) as I generally prefer to cook from scratch. Sometimes though, a product in the Free From freezer section catches my fancy – last week it was these gluten-free Mexican bean bakes by Georgia’s Choice which I spotted in Tesco.
It’s not often I get to eat something resembling a veggie burger so the novelty of these appealed to me. Plus, simply pop them in the oven for half an hour and voilà – an easy, hassle-free weekend lunch! Rather than going for a burger bun, I sliced my bean bakes up and popped them inside a BFree gluten-free wrap with iceberg lettuce, sliced red peppers and a few dollops of half-fat crème fraiche (I didn’t have any sour cream, but this worked just as well.)
The Mexican bakes were surprisingly tasty for an out-of-the-freezer-into-the-oven dinner and actually – despite the “breadcrumb” coating – tasted pretty healthy. It was just £2 for the pack too which, for the main ingredient of a meal, isn’t bad value at all. I think I probably will buy these again, it was a nice alternative to my usual “slummy” dinner of a gluten-free fish finger sandwich! Plus they’re on offer in Tesco until the end of the month.
